Food waste and food insecurity make this work urgent. Globally, 19% of edible food is lost to waste in households, food service, and retail. In Brazil, food insecurity is a major issue, and more than 23.1% of the population lives below the national poverty line.
Favela Organica teaches zero-trim cooking and waste utilization, showing people how to use the ingredient parts they would usually discard. The school also follows the principles of a circular food economy: participants turn food scraps into compost and return seeds to the soil to grow fresh food, aiming to close the loop between consumption and production.
Regina Tchelly founded Favela Organica in 2009. Her team now includes Dr. Thais Morgado and nutritionist Marilia Machado, who help participants take charge of their health and add more nutrients to everyday recipes.
Favela Organica combats the climate crisis and food insecurity by teaching people to make the most of what they already have.
